Blackberry Ice Cream

Clean low carb ice cream with fresh blackberries and pure vanilla cream. And maybe a spritz of lemon to keep things interesting.

Ice cream is the perfect excuse to add healthy fats to your diet. Or maybe you just want to impress your friends with an ombré milkshake.

Either way, you’ll enjoy decadent, fat-burning ice cream without being knocked out of ketosis.

Blackberry Ice Cream

Servings: 10

1 c blackberries, chopped

1 tsp lemon juice

10 drops liquid stevia (or equiv), to taste

4 c heavy whipping cream

1 tsp vanilla extract

In a 3-quart saucepan, combine chopped (or mashed) blackberries, stevia and lemon juice.

Mash berries lightly and cook over medium heat, stirring occasionally until the mixture comes to a boil. Simmer 5 minutes.

Remove from heat and puree in a blender. Cool the mixture. Add cream and vanilla.

Place in an ice cream maker and churn according to instructions. Freeze churned ice cream for an hour before serving.

Make Low Carb Ice Cream Pops

Special Ingredients

Blackberry Ice Cream

De-Bittered Stevia has no unpleasant aftertaste. This blend has none of the characteristic bitterness of typical stevia sweeteners.

Zero carb and zero glycemic impact.

Ombré Blackberry Milkshake

Ombré is a gradual blending of one color into another. Two simple layers create the effect.

Spoon softened low carb vanilla ice cream into a clear glass and place into the freezer 15 minutes.

Using Heavy Cream Instead of Ice Cream

Whip a few tablespoons of heavy cream with vanilla extract (to taste) and pour into a glass.

Place into the freezer 30 minutes. Remove and stir with a fork until cream reaches a thickened, icy consistency.

Other Subs

You may also use vanilla protein powder/shake, coconut cream, or full-fat yogurt for the bottom white layer.

Building the Ombré Effect

Blend blackberry ice cream with crushed ice (or half and half) to thin. Spoon over the vanilla cream mixture.

Stir gently and slowly with a knife or straw, being careful not to blend completely. Circling two or three times creates a smooth transition.
