Blackberry Ice Cream

Blackberry Ice Cream

Per Serving: 337 calories, 3 net carbs.

Servings: 10



1 c blackberries, chopped

1 tsp lemon juice

10 drops liquid stevia (or equiv), to taste

4 c heavy whipping cream

1 tsp vanilla extract



In a 3-quart saucepan, combine chopped (or mashed) blackberries, stevia and lemon juice.

Mash berries lightly and cook over medium heat, stirring occasionally until the mixture comes to a boil. Simmer 5 minutes.

Remove from heat and puree in a blender. Cool the mixture. Add cream and vanilla.

Place in an ice cream maker and churn according to instructions. Freeze churned ice cream for an hour before serving.


Make Low Carb Ice Cream Pops


Pour churned ice cream into popsicle molds.

Variation: Alternate pouring blackberry ice cream and half-and-half into each mold to lower the calories and create a marbled effect.

Whip a few tablespoons of heavy cream with vanilla extract (to taste) and pour into a glass.

Place into the freezer 30 minutes. Remove and stir with a fork until cream reaches a thickened, icy consistency.


Other Subs

You may also use vanilla protein powder/shake, coconut cream, or full-fat yogurt for the bottom white layer.



Building the Ombré Effect

Blend blackberry ice cream with crushed ice (or half and half) to thin. Spoon over the vanilla cream mixture.

Stir gently and slowly with a knife or straw, being careful not to blend completely. Circling two or three times creates a smooth transition.
